Winter calls for warm, creamy, and nourishing meals that soothe, warm, and energize. This one-cauliflower meal prep combines two of my favorite seasonal classics—light Alfredo pasta and quinoa salad with roasted cauliflower. It's the perfect combination of comfort food and a fresh bowl for hectic days.
Both meals are designed to keep you feeling full for longer without putting unnecessary strain on your body. Cauliflower provides fiber, quinoa provides energy, chicken, eggs, and cheese provide essential protein, and nuts with olive oil provide healthy fats. This means you have everything you need on your plate—without any complicated calculations or thinking.
I like this method of cooking mainly because it allows me to make two completely different meals from one base. It saves time during the week, helps avoid impulsive choices, and at the same time, you can treat yourself to creamy pasta or a lighter salad depending on your taste and mood. Simple winter meal prep that works in real life.

Difficulty simple
Ingredients
1. Light Alfredo pasta with chicken and cauliflower sauce
Ingredients:
- 200–250 g pasta
- 250–300 g chicken breast
- ½ large cauliflower (for the sauce)
- handful of dried tomatoes
- a handful of fresh spinach
- Approximately 100 ml cream (light or plant-based cream is fine)
- 2–3 tablespoons nutritional yeast
- approx. 100–150 ml of water from the pasta
- a few drops of lemon juice
- salt, pepper
- Parmesan cheese (for the sauce + topping)
- mozzarella or other cheese for baking
- a little oil or butter
Procedure:
Cook the pasta according to the instructions and set aside a cup of the pasta water. Briefly boil the cauliflower until tender.
Fry the chicken in a pan, season with salt and pepper. Blend the cooked cauliflower with cream, nutritional yeast, a little pasta water, a drop of lemon juice, salt, pepper, and Parmesan cheese into a smooth sauce.
Return the sauce to the pan, add the chicken, sun-dried tomatoes, spinach, and cooked pasta. Mix everything together and add more pasta water as needed to make the sauce nice and creamy. Finally, sprinkle with cheese and bake (or just grill) until the cheese melts.

2. Quinoa salad with roasted cauliflower, soft-boiled egg, and lemon-balsamic dressing
Meanwhile, the other half of the cauliflower is roasted in the oven and then ends up in a colorful salad with quinoa. Soft-boiled eggs add creaminess, Balkan cheese adds saltiness, and a simple dressing ties everything together beautifully.
For the salad:
- second half of cauliflower
- 1 teaspoon turmeric
- a pinch of ground cumin
- salt, pepper
- 1–2 tablespoons of oil
- approx. 120 g quinoa (dry)
- handful of arugula
- ½ cucumber
- beetroot (cooked or roasted)
- Balkan cheese / feta
- a handful of pine nuts
- 2 eggs (soft-boiled)
- optional: halloumi
Topping:
- olive oil
- lemon juice
- balsamic vinegar or balsamic reduction
- salt, pepper
Procedure:
Mix the cauliflower with oil, turmeric, cumin, salt, and pepper, and bake at 200 °C for about 25 minutes until golden brown.
Cook the quinoa according to the instructions. Boil the eggs until soft (about 6–7 minutes) and peel them.
Put the quinoa, arugula, cucumber, and beetroot in a bowl, add the roasted cauliflower, crumble the Balkan cheese, and sprinkle with pine nuts. Add the halved egg.
✨ Meal prep tip
Both dishes will keep in the refrigerator for 2–3 days. The pasta is also delicious reheated. I recommend storing the salad without the arugula and egg and adding them just before serving.
One cooking session, two different meals. Comfort + fresh. Exactly the type of winter meal prep that saves me time and makes me happy 🤍
Tips and tricks
– You can boil soft-boiled eggs up to two days in advance and leave them in their shells in the refrigerator.
– You can prepare a large quantity of roasted cauliflower at once – it goes great in wraps, on toast, or with eggs.
– If you want to increase the protein content, add more cheese, halloumi, or eggs to the salad.
– You can also use cauliflower sauce as a base for pizza or baked vegetables.
