Ingredients
○ 2 fillets of cod
○ 20 g butter (softened)
○ garlic clove
○ handful of fresh basil
○ 25 g breadcrumbs
○ salt and pepper to taste
○ 10 g parmesan
○ vegetables for the baking dish (tomatoes, zucchini, sweet potatoes)
○ olive oil to drizzle
Method
- In a small bowl, mix the soft butter with the chopped basil, breadcrumbs, Parmesan cheese, salt and pepper. Form a mixture that will form a crust on the tresca.
- Rinse the cod fillets under cold water and pat dry with a paper towel. Salt and pepper them on both sides to taste. Spread the basil butter mixture evenly over the top of each fillet. Try to evenly cover the entire surface of the fillet.
- Preheat the oven to 200 °C. Place the cod fillets on a baking tray and arrange the vegetables around them to taste (I definitely recommend tomatoes). Bake for approximately 20-25 minutes, until the fish is cooked through and the crust is golden and crispy. Baking time depends on the thickness of the fillets.
- As a side dish, you can choose sweet potatoes, which you can bake in a baking dish with the cod.
Tips and tricks
○ S pices: in addition to basil, you can add other herbs such as thyme, oregano or parsley. You can add a pinch of chilli or sweet paprika for a little spice.
○ Other fish: this recipe can easily be applied to other types of fish such as salmon, pike or tilapia. Adjust the cooking time according to the thickness of the fillets.
○ Check for doneness: cod is done when its flesh is easily separated with a fork and opaque. Do not overcook it, however, so that it is not dry.
