Ingredients

The base for fajitas:

  • 500 g chicken (breast or thighs)
  • 1 red pepper
  • 1 green pepper
  • 1 yellow pepper
  • 1 onion
  • 2 cloves of garlic
  • 1 lime (juice and zest)
  • 2 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon sweet paprika
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder (optional, for spiciness)
  • Salt and pepper to taste

For rice (if you choose the rice option):

  • 200 g rice (ideally basmati or jasmine)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 400 ml water or broth

On a tortilla (if you want the tortilla version):

  • 6 whole wheat tortillas

Optional ingredients for both variants:

  • Avocado, sliced
  • Cream or yoghurt
  • Coriander (fresh, chopped)
  • Grated cheese
  • Lime for flavouring

Method

  1. Preparation of the meat: Wash, dry and cut the chicken into thin slices or strips. Mix olive oil, lime juice, grated lime zest, cumin, paprika, smoked paprika, chili powder, salt and pepper in a bowl. Mix the resulting marinade thoroughly and let the meat marinate for at least 20 minutes (but ideally 1 hour).
  2. Prepare the vegetables: cut the peppers and onions into thin strips. Heat a little olive oil in a pan and add the onions and peppers. Sauté them over medium heat for about 5-7 minutes until softened but still crisp.
  3. Prepare the meat: In a second pan or grill, sear the marinated chicken. Sear on a second pan over medium to high heat for about 5-7 minutes until cooked through and golden. You can also use a grill pan for a better effect.
  4. To prepare the rice: rinse the rice with cold water to remove excess starch. Heat a tablespoon of olive oil in a pot, add the rice and toast it over medium heat for 2-3 minutes. Add water or stock, season with salt and bring to the boil. Reduce the heat, cover with a lid and cook for 10-12 minutes until the rice is tender and the water is absorbed.
  5. To assemble the dish:
Variationwith tortilla: Place a layer of prepared rice on a warm tortilla, then add a mixture of chicken and vegetables. Add fresh avocado, drizzle with lime juice, add yogurt or cream and sprinkle with fresh cilantro. Serve immediately!
Rice bowl option: place a layer of cooked rice on a plate or bowl, add a mixture of chicken, peppers and onions on top. Garnish with avocado, drizzle with lime juice, add some yogurt or cream, and sprinkle with fresh cilantro. This bowl can be eaten hot or cold, perfect for meal prep!
