Fluffy pancakes with fruit

This recipe is simple, quick and full of quality nutrients that will keep you full for a long time. The extra egg white in the snow will make the fritters beautifully light and fluffy. You can customize them to your own taste with different toppings such as fruit, yogurt or nuts. They're also great to combine in terms of fillings, so feel free to add chocolate chips instead of fruit.

Ingredients

○ 1 whole egg
○ 1 egg white
○ 50 g cottage cheese
○ 30 g oat flour
○ 1 tbsp vanilla protein (optional, can be replaced with ground nuts or oat/coconut flour)
○ 1/2 banana
○ sweetener to taste (stevia/chicory sweetener)
○ 50 ml milk
○ coconut oil or other fat to grease the mould

Method

  1. Prepare the batter: in a bowl, mix the mashed banana, egg yolk, cottage cheese and milk. Mix well to form a smooth batter.
  2. Preparing the egg whites: Separate the yolk from the white and whip the egg whites until stiff.
  3. Combine the egg whites and batter: Gently fold the beaten egg white into the prepared mixture. If desired, add berries to the mixture.
  4. Frying: Heat a little oil or butter in a frying pan over medium heat. Spoon the batter into the pan and fry the fritters for about 2-3 minutes on each side until they are beautifully golden and fluffy.
  5. Serving: serve the pancakes with your favourite topping - you can add fruit, yoghurt, nuts or even a little honey.
