Salmon with steamed vegetables and sweet and sour sauce

Steamed salmon is a dish that will surprise you with its simplicity. There are no complicated ingredients or long cooking time - just a fresh fillet, a few pieces of vegetables, some lemon and herbs. In the steam, all the flavours combine in a delicate balance to create a dish that smells clean and fresh. The sweet and sour sauce adds a light contrast. The perfect dish for days when you want to indulge in something exceptionally good, but still light and natural.

Ingredients:

For salmon and vegetables:

  • 2 × 150-180 g salmon fillet
  • vegetables to taste (e.g. asparagus, broccoli, green beans)
  • 2 teaspoons olive oil
  • salt, pepper
  • favourite herbs (e.g. thyme, parsley)
  • a few slices of lemon

For the sweet and sour sauce:

  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar or lemon juice
  • 2 teaspoons honey
  • 2 teaspoons cornstarch
  • 100 ml of water
  • a piece of grated ginger
  • a pinch of chilli

To serve:

  • 300 g cooked jasmine or basmati rice
  • sesame seeds and fresh coriander for garnish
  1. Place the salmon fillets and vegetables in a container (e.g. the steam program of a Philips deep fryer).
  2. Drizzle with olive oil, season with salt and pepper, add herbs and lemon slices.
  3. Turn on the steaming program for 20 minutes. Alternatively, cook in the oven, in baking paper or foil (wrap the salmon with the vegetables, drizzle with oil and bake at 180 °C for about 20 minutes).
  4. In the meantime, prepare the sauce - put all the ingredients in a small saucepan and boil briefly until thickened.
  5. Serve with rice, top with sauce and garnish with sesame seeds and coriander.
