Cinnamon-pecan Christmas slices

These cinnamon-pecan slices are inspired by traditional German Nussecken, popular nut triangles that are baked all year round—and in our country, often mainly in winter. They combine crispy spelt dough, a thin layer of fruit jam, and a fragrant nut mixture with cinnamon. My version is lighter, with less sugar and fat, yet still warm, delicate, and perfectly addictive. Ideal with coffee, for weekend baking, or as a small edible gift.

Crinkle cookies are wonderfully soft, fragrant and have the typical crackle that makes them a little chocolate dream. Plus, they come in a lightened version, with a bit of protein and applesauce, and they're easy to make gluten-free - just use gluten-free oatmeal. To spice them up, I recommend adding a little orange zest or gingerbread spice to give them just the right touch of Christmas.
