When I'm craving something sweet and I have ripe bananas at home, this dessert is the obvious choice. It's simple to prepare, full of fiber and can be made as muffins, bread or a cookie. In the summer I like to have it with vanilla or coconut ice cream and for breakfast otherwise with cottage cheese, peanut butter and jam.
