This single-serve cake with baked Lotus biscuit and chocolate and caramel frosting is a great sweet spot after dinner, but you can also have it for breakfast if you like to start your day with a sweet treat.

Ingredients
○ 1 whole egg
○ 2 tbsp applesauce
○ 70 g yogurt
○ 1/2 tsp baking powder
○ 10 g almond flour (can be replaced with a tbsp vegan protein - caramel, vanilla)
○ 35 g of ground oatmeal
○ sweetener to taste
○ 1 crumbled Lotus
○ topping to taste (melted chocolate / zero topping)
Method
- Preparation of the dough: Mix the ingredients in a bowl and form a dough which you transfer to a baking dish or bowl.
- Decorate to taste and bake in the oven or microwave (oven: 20-25 minutes at 180C / microwave: 3:50 minutes on medium heat)
- Serve with fruit, yogurt or topping to taste.
Tips and tricks
○ You can replace the almond flour with protein powder for more protein and if you don't like Lotus, you can put other cookies or blueberries on top, which will also give the dough a great taste.
