Difficulty simple
Ingredients
On the base:
- sweetener (honey, chicory, agave)
- 65 g oat flour
- 25 g whole flakes
- 20 g coconut or almond flour
- 20 g grated coconut
- 2 tbsp almond butter
- 1/2 ripe banana
- 30 ml of milk
- cinnamon or other spices to taste
For the cream:
- 250 g cottage cheese
- 130 g yoghurt or sour cream
- 10 g vanilla protein (I give vegan for consistency)
- 1 beaten egg white
- sweetener
Fruit layer:
- 300 g frozen fruit
- honey
- 2 tablespoons chia seeds
Method
- In a bowl, mix the ingredients for the crust and press it evenly into the bottom of the cake pan. Place the cake in a preheated oven at 180 °C for about 10 - 12 minutes.
- In the meantime , prepare the custard and stir in the beaten egg whites just before baking. Add the cream to the overbaked crust and bake everything together for another 30 minutes at 160 °C (or until the edges are golden and the cream has set).
- In the meantime , heat the frozen fruit in a saucepan and add the sweetener and chia seeds. Let the mixture stand so that the chia seeds soak in it and thicken nicely. After baking, pour it over the cake and chill overnight.
Tips and tricks
○ Decoration: before serving, you can decorate the cake with fresh fruit, shaved high cocoa chocolate or sprinkle with finely ground cinnamon for a more visual effect and taste experience.
○ Sweetener: Use a sweetener to your taste - honey, chicory syrup or agave will add natural sweetness without refined sugar. If the fruit is sweet enough, you can reduce the amount of honey or other sweetener or omit it altogether.
○ Consistency: If the mixture is too dry, add a little more milk or mashed banana. If it is too wet, add a little oat or coconut flour.
