If you also love sweet breakfasts, I believe that especially now in autumn you will love this simple cake that is beautifully scented with cinnamon and you can add apples, plums or plums. Yogurt and fruit goes great with it too and I recommend drizzling it with nut butter. This tart is proof that even healthy desserts can taste great and you can have them every day without regrets.

Ingredients

○ 2 whole eggs
○ 60 g applesauce
○ 100 g vegetable yoghurt (I give Alpro soy)
○ teaspoon baking powder + pinch of baking soda
○ 60 g oat or spelt flour
○ 20 g whole flakes
○ tablespoon honey (or drops of cinnamon stevia for flavouring)
○ fruit for garnish (plum or apple)
○ cinnamon
○ 10 g ground flaxseed
○ 20 g vanilla protein (I use Sunwarrior vanilla)
○ 50 ml milk

Method

  1. In a bowl, mix the eggs, yoghurt, applesauce, sweetener and milk.
    Add the flour, flakes and flaxseed. Mix well to form a smooth mixture.
  2. Grease the mould with coconut oil or other fat. I recommend adding baking paper to the bottom to prevent the cookie from sticking to the edges. Transfer the mixture into the prepared tin and spread it evenly. Add the fruit slices on top.
  3. Bake in a preheated oven at 180°C for 30-35 minutes, until the dessert
    is golden and firm to the touch.
