Try this delicious recipe for Christmas cupcakes that combine a delicate almond base, creamy custard filling and the sweet taste of white chocolate. Ingredients
Background:
- 60 g oat flakes
- 25 g almond flour
- 25 g vanilla protein
- 40 ml of milk
- 2 tbsp agave or honey
- 2-3 teaspoons of nut butter (I recommend salted caramel flavour for sweetening - e.g. Mixit)
- camomile or almond flavouring
Filling:
- 150 g cottage cheese
- 1 egg yolk
- 1 tbsp vanilla pudding or protein powder
- sweetener to taste
- forest fruit mixture or marmalade
Decoration
- 50 - 70 g white chocolate (melted in a water bath)
- fruit to taste
Method
- Preparation of the base: Mix all the ingredients for the base and press the mixture into the moulds, making a well in the middle. If the dough crumbles, just add a little extra milk or nut butter.
- Baking base: Once you have placed the dough in the bottom of the tin, bake the base at 180 °C for 5-8 minutes until golden.
- Filling preparation: Meanwhile, mix the cottage cheese, egg yolk, vanilla pudding/protein and sweetener in a bowl.
- Filling and baking: put the fruit on the baked base, pour the cream over it and bake for another 10-12 minutes.
- Decoration: cool the cupcakes and coat with chocolate.
Tips and tricks
○ More pronounced nut flavour: you can replace part of the flakes in the base with chopped nuts.
○ C hocolate dosage and decoration: if you just want to decorate the cupcakes gently, you can drizzle or draw fine chocolate stripes instead of coating them completely. For a festive look, you can sprinkle them with dried fruit, chopped pistachios, or edible gold or glitter.
○ Filling variations: If you don't like cottage cheese, you can substitute mascarpone or Greek yogurt for a softer texture.
