A quick snack of yoghurt, nuts and dates

These frozen yoghurt bites combine a nutritious base of nuts, dates and dried fruit with a creamy yoghurt custard enriched with vanilla protein. Garnished with fresh fruit, they make an ideal healthy dessert that's great as a nutritious snack. This dessert is packed with protein, healthy fats and natural sweetness, plus you can customize it to your taste preferences.

Ingredients

Background:

  • 100 g mixed nuts (e.g. almonds, walnuts, cashews, hazelnuts)
  • 5 dates (pitted)
  • 30 g dried fruit (e.g. raisins, dried apricots, dried apples)
  • 1 teaspoon sugar-free syrup (e.g. stevia syrup or other calorie-free syrup)

Cream:

  • 250 g white Greek yoghurt (ideally low-fat or fat-free)
  • 30 g vanilla protein (or any other protein of preference)
  • 1/2 teaspoon vanilla extract (optional)

For decorating:

  • 100 g fresh fruit (e.g. raspberries, blueberries, strawberries)

Method

  1. Preparation of the base: Place the nuts and dates in a blender or food processor and process to a fine mixture. Add the dried fruit and syrup and blend until all the ingredients are combined into a sticky mass. If the mixture is too dry, add a little more water.
  2. Forming the base layer: spread the mixture evenly on the bottom of the mould (preferably a baking tray with baking paper or a silicone mould). Place the mould in the freezer and allow the base to set for at least 30 minutes.
  3. Prepare the yoghurt cream: In a bowl, mix Greek yogurt with vanilla protein and vanilla extract. Stir thoroughly to make the cream smooth and lump-free.
  4. To finish the dessert: Once the base layer has set, remove the mould from the freezer and spread the yoghurt cream evenly over the nut and date base. Decorate with fresh fruit (raspberries, blueberries, strawberries or any other fruit to taste).
  5. Freezing: return the mould to the freezer and allow the frozen pieces to set for at least 2-3 hours, or until the cream is firm.
  6. Serve: Once firm, cut into 8 pieces and serve! If the pieces are too hard, leave them at room temperature for a while.
