Portions 1-2

Difficulty simple

Ingredients

  • 2 eggs
  • 1 egg white
  • 1 ripe banana (or apple instead)
  • 3 tablespoons of cottage cheese (about 90 g, I use Milboa brand)
  • 2 tablespoons cocoa (I recommend raw cocoa for a more intense taste)
  • 60 g oatmeal or finely ground oat flour
  • ½ teaspoon baking powder
  • sweetener to taste (depending on the ripeness of the banana, you can omit it)
  • fresh figs for serving

Method

  1. Place all the ingredients (eggs, egg white, banana, cottage, cocoa, flakes, baking powder and sweetener if necessary) in a blender and blend until smooth.
  2. In a non-stick frying pan, bake small fritters on both sides until golden brown.
  3. Serve with fresh figs, nuts or a spoonful of nut butter
  4. They can be served with fresh figs, dark chocolate chips and a spoonful of nut butter. You can also add a spoonful of Greek yoghurt for extra creaminess.
