Fluffy, fragrant and full of protein - you'll love these autumn pancakes with banana, cocoa and cottage cheese at first taste. They're quick to make, wonderfully filling and have an extra autumnal twist thanks to the figs. A perfect breakfast or snack that will delight even in the hectic September.

Ingredients
- 2 eggs
- 1 egg white
- 1 ripe banana (or apple instead)
- 3 tablespoons of cottage cheese (about 90 g, I use Milboa brand)
- 2 tablespoons cocoa (I recommend raw cocoa for a more intense taste)
- 60 g oatmeal or finely ground oat flour
- ½ teaspoon baking powder
- sweetener to taste (depending on the ripeness of the banana, you can omit it)
- fresh figs for serving
Method
- Place all the ingredients (eggs, egg white, banana, cottage, cocoa, flakes, baking powder and sweetener if necessary) in a blender and blend until smooth.
- In a non-stick frying pan, bake small fritters on both sides until golden brown.
- Serve with fresh figs, nuts or a spoonful of nut butter
- They can be served with fresh figs, dark chocolate chips and a spoonful of nut butter. You can also add a spoonful of Greek yoghurt for extra creaminess.
Tips and tricks
- Variations: if you don't like banana, you can replace it with apple - it adds a subtle sweetness to the batter and goes great with the autumn spices.
- Autumn flavour: add a pinch of cinnamon, cardamom or nutmeg to the cocoa for a stronger taste.
