Summer is the perfect time for fresh and flavoursome dishes, and nothing enhances them better than a tasty vinaigrette. In our last recipe, we already featured a citrus vinaigrette, and today I have a great tip for using it for a creamy herb dressing.

Ready in 15 minutes

Portions 6

Difficulty simple
Ingredients
1/2 avocado
Spoonful of Dijon mustard
Clove of garlic
Fresh parsley and cilantro (if cilantro is too aromatic for you, try basil)
About 50 ml of basic citrus vinaigrette
3 tablespoons water or vegetable yoghurt
Extra tip: a spoonful of delicatessen yeast
Salt, pepper
Method
- Blend all the ingredients until smooth and adjust the consistency to your taste (if the dressing is too thick, add a little water or lemon juice).
- Transfer the finished dressing to a jar or smaller resealable jars and refrigerate.
Tips and tricks
○ The dressing is great with roasted vegetables, but also with grilled meat or roasted tofu. You can even make it thicker and have it as a great addition to a healthy and balanced bowl. It will last ideally 3-4 days in the fridge (it won't spoil even after that, but it does lose its flavour).
