Ingredients

Salad

○ 200 g romaine lettuce
○ 150 g chicken
○ 20 g parmesan

Chickpea croutons
○ 100g canned chickpeas
○ tsp olive oil
○ 1/2 tsp sweet paprika
○ 1/2 tsp garlic (powder)
○ salt and pepper to taste

Dressing
○ 4 tablespoons Greek yogurt
○ 1 teaspoon Dijon mustard
○ lemon juice
○ salt and pepper to taste
○ 1 clove garlic (pressed)

Method

  1. Preparing the croutons: preheat the oven to 200 °C. Place the drained and rinsed chickpeas on paper towels. In a bowl, mix the chickpeas with olive oil, garlic powder, paprika, salt and pepper. Spread the chickpeas on a baking sheet lined with baking paper.Bake for about 20-25 minutes, until the chickpeas are golden and crispy. Stir occasionally to prevent burning.
  2. Preparation of dressing: In a small bowl, mix Greek yogurt, Dijon mustard, lemon juice, garlic, Parmesan cheese, salt and pepper. Mix well until a smooth dressing is formed.
  3. Salad preparation: chop or tear the romaine lettuce into smaller pieces and place in a bowl. Add grilled or roasted chicken breast sliced thinly. Add grated Parmesan cheese and roasted chickpea croutons. Pour the prepared dressing over the salad and mix well.
