These no-bake bars with chocolate and peanuts are not only delicious, but also easy to prepare and great as a snack during the day. The combination of chocolate flake base, peanut cream with dates and crunchy chocolate will remind you of your favourite Snickers bars.

Ingredients
Background:
- 1 cup oatmeal
- 1/3 cup nuts of your choice
- 2 tablespoons almond butter
- 1 tablespoon cocoa
- 1 tablespoon chocolate protein
- 60 ml vegetable milk or water
- 2 tablespoons maple syrup
Cream and frosting:
- 250 g cottage cheese or yoghurt
- 3 Medjool dates
- 1-2 tablespoons peanut butter (adjust to your taste)
- 1 tablespoon vanilla or caramel protein
- 100 g dark chocolate
- 1/2 teaspoon coconut oil
Method
- In a blender, blend oats, nuts, almond butter, cocoa, chocolate protein, plant milk and maple syrup until smooth. Transfer the finished mixture to a baking tray lined with baking paper.
- In a blender, blend cottage cheese or yogurt, dates and peanut butter. Add the protein and mix again.
- Spread the cream evenly over the base in the mould. Place the mould in the freezer to allow the cream to set nicely.
- Meanwhile, melt the dark chocolate with coconut oil in a water bath or in the microwave. Let cool slightly.
- Pour the melted chocolate as a top layer over the slightly stiffened cream. Place the whole thing back in the freezer and let set for at least 3 hours or overnight.
Tips and tricks
○ If you want the bars to be easier to cut, you can let the bottom layer with the cream set alone for about 2 hours and then cut it into bars and pour or coat in chocolate. In case you follow the same procedure as I did, leave them out for a while before serving to soften them and make them easier to cut.
