1/4 cup feta cheese, crumbled
1/2 cup chickpeas (canned, drained and rinsed)
Juice of 1/2 lemon
1 tablespoon olive oil
Salt and pepper to taste
Toasted pita bread
Chicken skewer:
200 g chicken breast, diced
1 tablespoon olive oil
Juice of 1/2 lemon
2 garlic cloves, chopped
1 teaspoon dried oregano
Salt and pepper to taste
Parsley Oil:
1 bunch of fresh parsley
1/4 cup olive oil
Juice of 1/2 lemon
Salt and pepper to taste
Tzatziki:
1 grated cucumber
4 tablespoons Greek yoghurt
2 garlic cloves (crushed)
Salt, pepper for seasoning
Olive oil
Dill (optional)
Method
- Mix olive oil, lemon juice, chopped garlic, dried oregano, salt and pepper in a bowl. Add the chopped chicken pieces and mix well so that the meat is coated with the marinade. Leave to marinate for at least 30 minutes.
- Preheat the grill or grill pan to medium-high heat. Thread chicken pieces onto skewers. Grill the skewers for about 10-12 minutes, until the meat is well done, turning them occasionally to cook through on both sides.
- Meanwhile, in a blender, combine the fresh parsley, olive oil, lemon juice, salt and pepper. Next to the chopped vegetables, mix everything together.
- Place tzatziki on the bottom of the bowl, top with lettuce, chicken skewers, drizzle with parsley oil and you can skewer a sliced pita or tortilla on the sides.
