Baking similar sweets has become my Sunday tradition, because it takes no more than 10 minutes to prepare and I always look forward to a sweet afternoon snack afterwards. The dough is versatile and you can substitute the poppy seeds with ground nuts or coconut flour.

Ingredients
○ 2 whole eggs
○ 100 g cottage cheese
○ 3 tbsp honey
○ 1 tsp baking powder
○ 1 tsp baking soda
○ 50 g oat flour
○ 50 g buckwheat flour
○ 25 g vanilla protein (you can replace with flour)
○ 3-4 tbsp poppy seeds (you can also substitute nuts or coconut)
○ juice and zest of 1/2 lemon
○ handful of blueberries
○ vanilla stevia or erythritol to sweeten
Method
- Preheat the oven to 165 °C and prepare a bread tin lined with baking paper (only the bottom will do).
- In a mixing bowl, combine the oat flour, buckwheat flour, vanilla protein (or other flours if not using protein), baking powder, baking soda and poppy seeds. Mix well to combine all the dry ingredients evenly.
- In another bowl, whisk the eggs with the cottage cheese, honey, lemon juice and zest until smooth.
- Gradually add the dry ingredients to the wet and mix until you get a smooth dough. You can either add the fruit straight into the batter or spread it over the filled mould.
- Bake the bread for about 40 minutes and check with a toothpick before removing it from the oven to make sure it is really done.
Tips and tricks
○ Flavouring and variations: if the bread is not sweet enough for you, you can always add sweetener to taste or jam directly into the dough before baking. You can also sprinkle the fruit with, for example, coconut sugar or drizzle it with honey. Feel free to add almond slices or other nuts on top for a change.
○ Baking tip: I always cut the baking paper off the bottom of the bread pan and grease the edges of the pan with coconut oil or butter to make sure the dough will roll out nicely.
