A great and simple dessert that is perfect for the weekend table and can be made by anyone. It is also so versatile that you can prepare it as a cake or bread. In spring and summer, it is perfect with fruit, but in winter you can prepare it with poppy seeds or nuts.

Ingredients
Eggs: 2 pcs
Milk: 100 ml
Cottage cheese: 250 g
Sweetener: 50 g (sugar or erythritol)
Flour: 140 g (60 g almond, 80 g spelt)
Tahini or nut butter: 1 tablespoon
Lemon: juice and zest of one lemon
Baking powder: 1 teaspoon
Baking soda: 1/2 teaspoon
Fruit or nuts: to taste (optional)
Method
- Dough preparation: start by mixing the wet ingredients - eggs, milk and cottage cheese. Then add tahini or nut butter to this mixture and mix well.
- Dry ingredients: in the next step, add the flour mixed with baking powder and baking soda. Again, mix everything thoroughly until the dough is smooth.
- Adding the lemon and nuts: now it's time to add the juice and zest of the lemon, which will give the cake a refreshing taste. At this stage, you can also stir in fruit or nuts if you wish.
- Baking: pour the batter into the prepared tin - whether you choose a bundt tin or a regular baking dish. If you prefer a simple style, you can omit the fruit and add, for example, poppy seeds.
- Baking time: bake the cake in a preheated oven at 180 °C for 30 minutes, or until the top is golden and a tester comes out clean.

○ S erving: this cake can be served warm or cold, ideally with a dollop of whipped cream or a scoop of vanilla ice cream.
○ Gluten-free version: instead of spelt flour, try using gluten-free oat flour
