Summer series part III - potato pancakes with zucchini and halloumi

Try these tasty zucchini, potato and halloumi cheese patties, which are ideal as a quick and healthy snack or light lunch. The preparation is simple, the ingredients common and the result is fluffy cheese patties that are easy to garnish with your favourite extras.

Ingredients

  • 2 eggs
  • 2 tablespoons chickpea flour
  • 2 medium potatoes
  • 1 smaller zucchini
  • ½ block Halloumi cheese (you can use the rest in the salad)
  • Salt, pepper
  • Optional: dried oregano or thyme

Method

  1. Finely grate the zucchini and potatoes into a large bowl. Salt them lightly and squeeze out the excess water so that the patties stick together nicely.
  2. Add grated halloumi cheese, egg and chickpea flour. Season with pepper and dried herbs to taste.
  3. Heat some olive oil in a pan. Form small patties and fry for about 3-4 minutes on each side until golden brown.
  4. Let the finished patties drain on a paper towel.
