Ingredients
- 2 eggs
- 2 tablespoons chickpea flour
- 2 medium potatoes
- 1 smaller zucchini
- ½ block Halloumi cheese (you can use the rest in the salad)
- Salt, pepper
- Optional: dried oregano or thyme
Method
- Finely grate the zucchini and potatoes into a large bowl. Salt them lightly and squeeze out the excess water so that the patties stick together nicely.
- Add grated halloumi cheese, egg and chickpea flour. Season with pepper and dried herbs to taste.
- Heat some olive oil in a pan. Form small patties and fry for about 3-4 minutes on each side until golden brown.
- Let the finished patties drain on a paper towel.
Tips and tricks
- If you don't have chickpea flour, you can use another gluten-free option, such as corn or buckwheat flour.
- The patties can also be baked in the oven on baking paper at 200 °C for about 15-20 minutes on each side for a lighter version.
- You can cut the remaining halloumi into cubes and add to a salad or roast as a side dish.
