Roasted sweet potatoes, tzatziki, salsa, and lime chicken

Ingredients

  • 2 large sweet potatoes
  • olive oil
  • salt, pepper
  • 2 chicken breasts
  • juice of 1 lime
  • dried garlic
  • smoked paprika or chili
  • 1/2 cucumber
  • 150 g Greek yogurt
  • 1 clove of garlic
  • a drop of lemon juice
  • 1–2 tomatoes
  • 1/2 red onion
  • a handful of fresh cilantro (optional)
  • fresh dill for tzatziki

Method

  1. Roasted sweet potatoes: Wash the sweet potatoes thoroughly, pierce them several times with a fork, brush them with olive oil, and lightly season with salt. Bake in an oven preheated to 200 °C for about 45 minutes, until they are nice and soft inside.
  2. Lime Chicken: Season the chicken breasts with salt and pepper, then drizzle with lime juice and olive oil. Let them marinate for at least a short while (ideally 15 minutes). Then pan-fry or grill them until golden brown, so they stay juicy.
  3. Tzatziki: Grate the cucumber or cut it into small cubes, gently squeeze out the excess water, and mix with yogurt, minced garlic, salt, pepper, and a little lemon or lime juice.
  4. Salsa: Dice the tomatoes and onions into small cubes, then mix with lime juice, salt, pepper, and chopped cilantro, if desired.
  5. To serve: Cut the cooked sweet potatoes lengthwise, gently open them up, and fill with the lime-marinated chicken. Add tzatziki and salsa to taste.
