Apple pancakes with cinnamon and chia jam are one of my favourite breakfasts. You can also make them in a gluten-free version and if you want, there's a quick tip in the recipe on how to make the jam in 5 minutes.

Ingredients
○ 2 whole eggs
○ 1/2 grated apple
○ 2 tbsp cottage cheese
○ 1/2 tsp baking powder (PDP)
○ 2 tsp cinnamon
○ 25 g ground oats + 15g whole oats
○ sweetener to taste
○ 50 ml milk
○ coconut oil or other fat to grease the mould
Chia jam:
○ 250 g frozen fruit
○ 2 tbsp honey
○ 2 tbsp seeds
○ a few drops of lemon
Method
- Preparing the pancake batter: mix all the ingredients together to make the batter. Finally, add the apple (sliced or grated) and cinnamon.
- Frying the fritters: put a little coconut oil in a non-stick pan and shape the fritters (turn down to a low flame and fry on both sides).
- Chia jam: put the fruit in a pot and pour honey over it, once it starts to release its juice, add the chia seeds and sprinkle it with lemon. Let it simmer for a while and then let it sit for about 10 minutes to soak up the chia seeds.
Tips and tricks
○ Chia jam: you can even speed up the preparation and put the ingredients in a bowl in the microwave for about 3 minutes. This is a quick tip especially if you only want to prepare a small amount.
○ Gluten-free option: substitute the oatmeal for flour or gluten-free flakes.
