Ingredients

4 medium blooms (approx. 300 g), cut into pieces

1 tablespoon honey or maple syrup

1/2 teaspoon vanilla extract (optional)

40 g oat flakes (I give a combination of whole and ground)

1 tablespoon butter (melted)

1/4 teaspoon salt

2 teaspoons cinnamon

1/4 cup ground almonds to flour

1 tablespoon vanilla protein powder (optional, you can substitute flour)

Method

  1. Preheat the oven to 180 °C. Place the chopped blums in a bowl and mix with honey or maple syrup, cinnamon and vanilla extract (if using). Spread the prepared fruit evenly over the bottom of the baking dish.
  2. In another bowl , mix the flour, oatmeal, salt and cinnamon. Add the melted butter, sweetener and mix. Spread the mixture evenly over the fruit in the baking dish.Bake in the preheated oven for about 25-30 minutes, until the surface is golden and the fruit is soft and bubbling.
  3. Serve warm, or with a little Greek yogurt or ice cream to taste.
